Wood cladding onto Steel garage door
I was hoping for some suggestions on how to attach some 1×4 (7/16″ x 3″ face) cedar t&g to a flush panel steel insulated garage door. I have concerns about differential expansion/contraction between the wood and the steel. The door is under a 5′ overhang and we will be ordering the appropriate springs for the additional weight. Perhaps gluing/screwing to plywood substrate?

You might have to adjust the tracks back away from your jamb.
Consider adding struts to the inside of each panel to keep the sections from buckling under the new weight.
Larger springs will be a must, after all your work is done weigh the door and have the right springs sized and made for you.
Any hardware added on wooden overhead doors get through bolted with carraige bolts. Those might be my first choice for fasteners.

Will you be satisfied with face screwing? Then I'd screw (with SS trim screws) directly to the door and avoid the extra weight/thickness of the plywood.
You'll have joints every 4-6 feet horizontally, eliminating most problems with expansion/contraction.
