I am looking to build a bar front using face framing and plywood panels. I would like to use some exotic woods and I don’t know if there is a rule of thumb as far as what goes with what. I want to use two different species.

I don't know of any rule for "what goes with what", it is mostly just an aesthetic choice that must be coupled with good joinery in order to avoid problems. Pick the species you like and focus on how to put it all together. The only thing you might consider is that some exotics are potentially harmful in terms of inhaling the wood dust, and that will differ from person to person.
