I wanted to build a 30×60 pole garage. The building inspector said if its over 48′ that i need engineer stamped drawings. I am wondering if i can just build 2 30×30 buildings aginst each other and connect them with a door. That way they would be considered 2 buildings and i would not have to spend $3200 on drawings.

I’ve got a call into Madame Zelda to see what she thinks.
Building 2 separate garages would cost far more than $3200.00
Go ahead and build it! Then sit back and wait for the violation notice to arrive.
By your logic a 30 x 60 barn with a wall in the middle is 2 barns. I don't think anybody would buy that. You should be able to buy engineered drawings for a pole barn.
How can a house with a wall in the middle be considered 2 houses? A town house. They share a common wall but are considered 2 houses. If you know where to get engineer stamped drawings for a 30x60 pole barn in Pa for less than $3200 let me know.
A townhouse is not considered two separate building permits. It's one permit for the two structures. You are not going to get away with just building a wall.
Are you sure Morton buildings or any of the other mfg wont supply you engineered drawings?
