What do you tin-benders use when you need just one or two low-current relays to peform “logic” functions in a system — switch 24V control signals? I’m looking for something that doesn’t involve investing in sockets and a mounting box, just a lug-mount unit that you can connect to with screws or spade connectors.

I have a Trane parts store nearby that should have 24v relays. It's new and I haven't been in it yet, but the previous Trane Supply house had 24v relays that I could buy, and you didn't need any kind of HVAC license to get them.
Another source is an well stocked electronics supply house. We have one downtown and they carry base and socket type relays, but they're fairly cheap.
This is a link to an on-line place that I've used, though haven't bought relays, yet. The link is for a relay type of which I have about a half dozen in my systems. They're pretty useful.

Yeah, I previously used a relay like the one you pointed to. It's basically a standard fan relay for AC control of a GFA furnace fan. It works fine but is overkill, is pretty loud when closing, and draws a heck of a lot of coil current.

Yeah, I just found Mouser a little while ago via Google -- had never seen them before. Found one Omron that looked like a possibility, and now see that the P&B KUP-11A55-24 might be reasonable.It's irritating how poorly many of the web sites are organized. Mouser is better than most but only tolerable. Many will only let you search by part number. Others force you to page through 50 pages of stuff to find what you want.

What in out are you looking for ? did you check out johnstone on line? sometimes you can find it with a little digging.
The other big time electronics company for stuff like this is Digi-Key, at http://www.digikey.com/. Their online catalog is pretty easy to work with, plus they're right here in Minnesota.
Google for "Electronic Goldmine" or "All Electronics." Two very good surplus electronics outfits. Pretty well organized web pages. Most stuff is brand new.
