I am considering bamboo kitchen cabinets. My contractor is getting me some samples but there don’t seem to be very many available. Are these a bad idea? Is there a good reason that there are so few on the market?

If you really like the look of bamboo, keep searching. If you're trying to be "green", please consider the entire carbon footprint. I'm sure much bamboo comes from China and getting it here requires a lot of non-renewable energy. The Chinese are also not known for their environmental sensibility in manufacturing products.
We're fortunate to have wonderful and abundant native hardwoods that are harvested and processed by local businesses, often close to the plants that will manufacture your cabinets.

Without walking down two doors and asking the cabinetmaker (it's just started raining, again, sheesh), I'd guess that the reason would involve availability of bamboo-veneered panel goods with matching 5/4, & 6/4 stock.
But, that's a guess on my part.
Latest FH has a kitchen w/ Bamboo plywood kit. cab doors.looks great.
