My preference is Flecto Varathane. It's a polyurethane, available in oil or water base. I like the oil, it's a bit harder, and it gives the doug fir a nice warm color, with no blue cast. Application is not real difficult. It will take a couple days though.
I put on coat #1 in the morning, coat #2 that afternoon as soon as I can walk on the first coat. The next day, I sand quickly with 220 grit random orbit sander, wipe down with paint thinner, then put on coat #3.

Are you POSITIVE that you want a high gloss finish? They have several shortcomings which are escaping me right now. But all the flooring people I talked to (which was about 6) said that their customers who got a high gloss finish regreted it later. I think the biggest problem is that it scuffs up in higher traffic areas and begins to look non-uniform.
