Best interior spray foam insulation for stone and celotex exterior

Open or closed cell insulation for 2×4 interior wall insulation? Doing a remodel of a 70s ranch with a 3″ stone exterior over Celotex. I would prefer the higher R value of closed cell but do I need to be concerned about the possibility of trapping moisture between the insulation and Celotex? Open cell will allow moisture to pass through, is this a benefit for my situation. Also have a choice between open and closed cell in a 2 x 12 cathedral ceiling.

Solid Stone Walls tend to be solid all the time. The stone wall tends to be the breathing walls and helps in maintaining the breathability. Wood fibre, cork, or the like with a lime external render makes good sense. The external insulation has no impact on this.
