I want to use high heel trusses, the kind that allow greater insulation depth at the exterior top plate, on my next home and I was wondering what kind of birdblocks do you use?

Rather then putting blocking above the wall cap-plate, run the wall sheathing up to cover the ends of your raised heel trusses. That way the ceiling insulation can extend all the way out to the outboard side of the top of the wall. If possible, run the wall sheathing all the way up to ~1.5" below the roof sheathing as it acts as a damn to help prevent the loose fill isulation from spilling out into your soffits.
2x10s work on a 12" heel. 2x8s on a 9" heel.
