What do you guys use for coating butcher block counter top in the kitchen? They won’t be chopping on this but it certainly will have food contact. I used to use just plain mineral oil and then scrape it down every year and re oil. Is there any new product for this or any better suggestions?

I did one last year using Waterlox. It still looks like the day I installed it. Of course they do not cut/chop on it.

Is Waterlox a penetrating oil or a film like polyurethane?

I use boiled linseed oil. It dries quickly and does not have to be "scraped off". I cut on my counter top so it has a rustic look.
