I know copper prices have taken a jump lately. I will be starting to build a workshop in the next few weeks but most likely will not get to the wiring until late July. Am I better off buying the wire know or does anyone see the price of copper stabilizing and maybe even coming down a little?

No one knows, but I'd wait.
Buy it now and keep the receipt; if prices drop significantly return it unopened for a refund.
I've got a whole house to rewire and am waiting in the hopes that it will go down a bit.

Do what you have to do with computer stuff -- buy it and then quit checking prices.
Check some of the less likely sources for wire they may have had around a while --
I just recently found a roll of 12/2 for $65 at a local hardware store. My assumption is that that's what they've been charging for a while. When HD was at $52, the hardware store was expensive, but when HD doubled in price, the hardware store was still sitting on older stock which they didn't reprice.
I think I got the last roll.
Don't think we're likely to see a lower price than that anytime soon.

Wire prices finally fell a little browsing today vs. last week.
I predict they will fall some more.
Actually, I BET they will fall, because I already sold my copper mining stock.
Copper tubing did not fall.
Another encouraging sign of deflation; Grace Ice and Water Shield fell from $100 per roll 2 weeks ago to $72 today. PVC pipe has fallen off a bit too.
