I’m planning a basement remodel that includes demo of an old wet bar. Do I need to do anything special with the old sink drain, or can I just cut it off and fill with concrete before the carpet is laid. Also, can I just cap the supplies or should I eliminate any dead ends by removing the branch all together?

Is the drain plastic or CI?
Either way I think I would cap it some way and leave it level with the floor.
Remember you may not be the last one to remodel the basement and someone else may want to put in, ah... a wet bar in.
The water lines I would take back far eneough that they are not abandoned inside a wall. It will be easier to run them somwhere else if it is ever needed, and you won't need to dig them out of a wall.
i would also cap the vent ether in the wall or on the roof
To do this properly you need to cut hole in the slab around the pipe so you can install a floor-access fitting over it once you have capped it a couple of inches below grade. Concrete the access fitting in place, install the cover plate, and lay the carpet over that.
I also suggest you make the next remodeler's life a bit easier by not using a glue-on pipe cap, but something that can be unscrewed. ;-)
