I’m planning to cover an existing interior brick wall with a cast stone product. Even over clean, non-painted masonry the manufacturer requires a scratch coat be applied first, before the stone is mortared to the wall.
Wouldnt mortaring the stone directly the existing brick achieve the same thing? Any ideas why the scratch coat is needed, and what would happen if I skippped it?

You can do it that wqay, but you will have a weaker bond, and it will make for harder work, IMO
