What is the correct way to attach the strapping to the joists? Nails or screws? I can’t seem to find that answer anywhere.

There is probably no correct answer, but I hear two 8p nails at each intersection is the norm.
Either is fine but if you need to adjust the strapping to bring the ceiling "in plane" it's easier to do with the adjustability of screws.
