How else would you cover the gaps?
best practice is to first 'blind caulk' or lay in a bead of caulk against the window trim/building paper first, then put the siding board up, with up to a 3/16 gap.
Then fill the gap from the outside and smooth it with your finger or scraper, like a credit card.
acrylic latex caulking is no good. It has gotten cold here, and I have spent two days with a scraper and utility knife replacing the acrylic joints with polyurethane. Make sure to have plenty of mineral spirits.
