You really should post over at cooks talk, instead of House chat. They will be helpful, if you give them a good idea of what your style is at your restaurant, cost issues, etc. etc. They don't respond well to such open ended questions, but if you re-phrase your question, you will not find a more helpful group anywhere. Also, what do you consider "basic"?
