I have a 12 x 24 foot outside deck constructed from pressure treated pine (2×8 joists on 16″ centers) that I am putting a roof over. I would like to take the 5/4 deck boards off the joists and pour a concrete slab over the joists. Any recommendations on how to do this??

Any concrete slab that's thick enough to be durable is going to be a lot heavier than the wood decking. Is the frame stout enough to carry the weight?
Sure, sister steel bar joists beside the 2x8's, weld up your steel pans, and pour it.
Dont for get the steel beam and new columns too. and the new footings for the columns to bear on.
and have a ready answer when everyone askes why them 2x8's are there.

Who Dares Wins.
you could pour 2 inches of lightweight concrete with a rebar mat. But lightweight not cheap. about $150 a yard.
Don't do it Erich, good that you asked first. Remove the existing and place the slab on prepared fill etc.
