I am a DIYer. I am contemplating using a corrugated roofing product on my new workshop. The specific one I am thinking of using is Ondura. I was wondering if anyone could share their experience with using corrugated roofing? Why should/shouldn’t I use it versus asphalt shingles?

What I have was sold as Onduline, looks exactly the same. If you'll remove it, you're welcome to it. Shoot, if you'll haul it off I'd probably remove and stack it on your truck for you. It's crap.
Moves too much for the nails to hold well, which creates leaks when the nail holes enlarge. I hate asphalt shingles so it looked like a much better alternative, and has been painted once when the factory paint started to fail. That's the only good factor, it does repaint well.
Now I only consider metal, copper to be exact. Doesn't take much of any longer to install and has passed the test of time. Obviously you'd have to decide it's worth paying the higher material cost to not reroof in a few years.
If you decide to use it, make sure you don't walk on it in full sun. You'll leave tracks and damage the finish.

We put 8oz corrugated fiberglass panels on our covered deck about 15 years ago. It's apparently similar to the stuff you're looking at. It went on pretty much as one would expect, with no real gotchas. We used the pre-cut (wavy) wood purlins under it, and the prescribed aluminum gasketed nails. Hand-crafted a ridge vent by epoxying two pieces together at the right angle, then attaching valley to ridge.
We do on very rare occasions get wind-driven leaks through the joints, but nothing substantial.
Noisy as heck in a hailstorm, but has withstood a lot of wind with no problems.
