Double the MDF at the 1 foot cantilever the entire 7 foot length. Or even better double the whole island top. Is faster- Ezier and (stronger)

I'm not a tile guy, but can tell you cement backer board and 3/4" plywood are part of the solution.
Do a search for "tile counter tops" in the archives here. I think you find quite a few discussions on them.

Ditto cement board and 3/4 ply. For a foot of overhang I would reinforce the cantilever, that's just my judgement call.
I wasn't thinking about the tiles. You need the cement board in top of MDF or plywood.
