Cultured stone is suppose to look like real stone. It's not a perfect science, so rely on your eye, and let them vary very slightly. Make it look real. The techniques you mentioned are fine. Also consider using a 4" grinder for tooling the pieces. Tile nippers work good for removing very small pieces.
