Azek is a good choice, IMO. A brickmold looks good. My local yard has a couple of the electric heat mats used to shape it....works really slick. I've done several windows with no problems.
You can also bend other trim patterns, like 1X4 Azek with the mat. I've not done it with anything but the brickmold, but saw it demonstrated.
And once the material has been heated, formed and cooled, it adopts the set.
The first time I tried it, I used a heat gun. Broke the first piece, but managed the second, but it was slow.
I have done a few homes with curved window trims with hardi. We used segmented wood trims. Each segment is the same and you can use as many segments as you feel looks good. If you back the segments with a thin ply wood as well it helps with installation. I have done paint grade trims on all the hardi, but I used this method with cedar around two 6'0"-6'0" quarter round windows on my own house. I got a sheetmetal guy here to make the curved flashing for me. it was pretty reasonable but those can get pricey.
