Just curious. Having a guy quote that meshes walls, rather than shooting moist-pac and shearing the excess off.

There are a number of ways to achieve a level foundation and mudsill.

It's not much of a direct answer, but when I did My Old House, it seemed like more of my time was spent putting down the non-woven fabric, than pumping Dense-Pac.
'Cause, to keep the cellulose from bunching up on top of the stud - making the drywall installation difficult, I did a 100% construction adhesive coverage on the stud after I stapled on the fabric.
I also probably packed in some places more than I shoulda. In a few places the pack was proud of the studs, causing me to have to sneak the drywall down, slowly with a bunch of screws.
Never underestimate your ability to overestimate your ability
I've blown cellulose in the walls of my house 3 times now. I get in about 8 bags per hour.
We use mesh, lightly stapled, then strapped horizontally with 1x3. This contains the insulation bulges and gives easy drywall install. I would never use the wet application again. Too much moisture in the walls.
We are also 8-10 bags per hour though that may be because of the lousy machine we use.
