Gonna replace 10 dh windows with vinyl. Any Common traps I’m setting myself up for? Only real question I can see so far is the sill. It slants down and out and I will have to massage the framing to set my window appropriately and then retrim everything.

Have you considered replacement windows that just fit into your existing window frame? Or is your current frames in need of replacement as well?
Just throwing that out incase you hadn't thought of it.

I did just that in my house. Found an old window (from a previous remodel) under the house, took it apart and used it for a pattern. The first one was pretty slow with a lot of cutting, fitting, and testing, after that, they went pretty fast. These 100 year old windows are pretty big, cost me 40 bucks each to have the glass cut for each pane. (only one glass shop in town).
I replaced the double hung windows in this house with http://www.Milgard.com units, about ten years ago. No complaints so far.
If I remember correctly, one of the measurements they asked for had to do with the angle of the sill. In any case, they all fit nicely without any "massaging".
Very simple job, all things considered. I got on the web site and decided which windows I wanted. Then, using their directory, found several nearby dealers and faxed each of them a list of what I wanted and asked them for a price.
The vinyl replacement windows I've installed came with an angled piece of vinyl to deal with the downward sloping sill issue.
Keep the slanted sills. Get the 'pop-in' replacements, as others have suggested.
They're made to fit your sills just fine.
And DON'T do any demolition until the new windows are on the property. You'll be very pleasantly surprised at how simple the job will be.
