Setting-type joint compound. Usually labeled as 45 or 90 minute stuff in HD and Lowes. Contains plaster. Shorter times are available.
I'm sorry, I thought you wanted it done the right way.
Setting-type compound sets up quicker, but it's not so easy to sand. Some use Durabond (setting type) for the first coat, and finish with regular compound that is easy to sand.
Or, find a skim-coat plasterer and have the whole thing done in a day with a much better product.
