Can you keep the rock from absorbing too much ambient moisture?
Theres no reason . Its done all the time . No new house being drywalled has heat .

You might not need heat in your area, but in the winter here it would never dry, worse yet if it freezes before its sets up, the jointts are ruined

I am about to be at the dry wall stage what about dust in the vents ? Can I cap all the vents during sanding ? I have a fireplace that shouls heat the whole house will that work ? It is about 20degrees right now...

We just nail a piece of scrap material over them - OSB, siding, whatever...

You need to protect the return air from dust, dust is not likely to travel far down the vents.
If your fireplace can handle heating evenly go for it.... but I doubt a distant closet will be as toast warm as the room where the fire resides.
Hanging drywall with no heat = SOP around here.

We (builders I work for) never rock without permanent heat running in freezing weather. No kerosene or unvented propane allowed.
You'll probably be ok if no heat is used during installation too, so the board and structure maintain similar temps. Uneven and non-consistent heating will result in bulged butt seams.
