Hi,
I’m putting a kitchen sink cabinet in an alcove. I’ve just finished the frame out stage of the alcove. Do I install the drywall before or after the countertop?

Drywall first. I like to check the framing with a straight edge, especially at countertop height. Then, I fill any "low spots" in the framing by stapling drywall shims onto the studs.
Sraightening the wall in this way, the "counterfitting" is much easier.
And I'd finsh that drywall and paint it too before countertop install. Much easier in that order.
...but if you already have base cabinets installed, do yourself a favor and cover the top with scrap plywood or a well-fastened drop cloth. The dust from sanding the joint compound will be a real pain to get out of all the nooks and crannies in the cabinets below. Also, grab yourself a bucket of "Dust Control" joint compound rather than the regular stuff - it seriously works wonders in keeping the dust, well, under control...
