I am looking for tips and advice on how to handle the drywall the extends out beyond the jamb of doors and wood frame stained windows. It seems to range from recessed (no problem) to extending out up to 1/4″. My plan is to take a utility knife and flare back the drywall to allow a clean set of the trim on the jamb. This method seems to put the trim at a slight angle from the plane of the wall and leaves a gap at the outside edge of the trim. I will be using 3.5″ wide stained trim.

I couldn't tell by your wording, but I'll presume that the doors and windows are not in yet. In that case I would use a drywall sall or a keyhole saw. A lot quicker. I have to ask why it is sticking out past? And who hung the drywall?
I don't think you're talking about drywall hanging into the RO, I think you're saying that you have a door or window and at some point, the jamb and the wall are on the same plane, and at other points, they're not. Basically here you need a jamb extension and there you need to shave the jamb. If that's right, fire the carp and reset the stuff before you even think of trimming. You will not have a good end result if you try to cobble from here.
