Is there anything like drywall j-channel (or is it J-mold?) that has something like a strip of foam along the outside for irregular surfaces?
I have ceiling drywall (fire-x) in the garage that abuts brick. I would like something that gives me a nice seal along the brick, and that is somewhat waterproof (from moisture that wicks through the brick).
I’m think along the lines of J-channel with that peel-and-stick foam insulation.

Not sure what any of that would do for your fire rating. They make the dry wall J in steel, then use fire caulk.
That's pretty much what I'm thinking too, but I thought if there was something in one step, that would be cool.
My drywall guy was describing something to me the other day that sounds similar to what you're after. He called it "tear-away bead".
I'd suggest calling a commercial drywall supply house and seeing what they've got.
Or Google "drywall trims" or soething like that.

I have used that several times. Good stuff for giving you a nice finished egde beside an irregular surface. It is more like an inverted L shape with a small removeable flang opposit the bottom of the horizontal leg of the L. It finishes like a corner bead, with the knife running agianst the tare away flang. After the final coat, you peel off the tare away edge and you have nice crisp and staright finished edge on the board.
It will not conform to irregular surfaces. It will keep you from getting mud on the surface if you are carefull (nothing worse than trying to clean joint compound off of brick, unless it is clay mud off of brick).

Well, you could use vinyl j-channel and peel-and-stick foam weatherstrip.
Or, better yet, j-channel and urethane caulk matched as closely as possible to brick color.
