Haven’t used drywall j-trim before so …. I will be drywalling around a zero clearance wood fireplace. The non-factory edges will surround the unit. If the cut edge is “good” is it still preferable to use j-trim?, do you mud over the j-trim? .. or will expansion/contraction from the heat of the fireplace cause the joint to crack anyway??

As a drywaller, we rarely see J mold used any more. I would suggest a tape on L bead, installed after the drywall. If any movement (expansion) is expected leave a small gap between bead and fireplace and caulk it.

Try "tear away bead". Like Mikes' L bead but with an added piece that will protect nearby surfaces while you spackle.
When you're done, the extra piece can be torn off like painters tape. The spackle is undisturbed and the fireplace clean. Makes life a little easier...buic
