We had a house built in 2000, using drywall on the ceiling of the front porch. Over the past six months, almost all of the tape has come off. We’re wondering if we should get someone to re-tape it or pull it all down and go with something else. If we re-tape, what should we look out for?

If this is a front porch that is open to the elements, including a screened in porch, Wrong uses of material.
Rip out and replace or cover over with the proper material.
At the very least it needs to be taped with "setting" type joint compound. (Stuff that must be mixed with water before use and hardens within an hour or so, without needing to dry first.) If the drywall is of the moisture-resistant variety then that may give you decades of additional life. (If it's not moisture-resistant then it will eventually fail, regardless of the type of joint compound.)
Observe the drywall and decide if it's sagged between ceiling joists. If so, it probably should be replaced with the new fiberglass-reenforced drywall.
