The wife doesn’t like the look of the exposed V-groove T&G boards that are the ceiling in an addition in our house. Any reason we can’t cover it with 1/4″ drywall? Will expansion and contraction of the boards cause the drywall to crack? The 2×8 T&G boards are also the roof covered with tar and gravel.

I'd usually recomend seeking counsel before jumping straight to divorce proceedings...but in this case, it may be too late. ; )

I'd be a little concerned about the T&G moving with changes in humidity and causing cracking at the drywall joints....but depending on the age of the ceiling, ya might get away with it. To be on the safe side, I'd probably throw some 1X strapping up there and hang the rock on that.

1/4" drywall will never be flat, nor does it meet any codes simply because it can't hold it's own weight. 1/2" is better and 5/8" is better yet.
Something doesn't sound right, Crash. You must have some rafters of some kind, insulation? I can't imagine that the roof is just T&G with tar and gravel. If it is, you'd better be careful with the length of your nails. Strapping first would be the way to go. I'm not sure if you will find 1/4" drywall. 1/2" would be my choice.
