I’m helping my son drywall his kitchen – home built in the mid 30’s — thus walls/ceiling are not perfectly square. When we place a 4 x 8 drywall sheet there is a distinct gap along part of the ceiling and the wall. How do we overcome the discrepancy?– cut the drywall to suit or is there a “trade’s” method of filling in the gaps?

if you're going to the effort of replacing drywall why not strip it down to the studs and make everything right.
In kitchens especially the 3 rules apply: plumb, level, and square.
depends on the size of the gaps you're talking about.
If they are going to be over maybe a 1/2" Cut the drywall to fit
smaller and I prefill with fast set mud and tape. Fast set can be either Easy Sand or Durabond type bag products found in the big boxes
I agree, if the plaster is on the wall strip it out then you can shim out the studs
and ceiling ( you could use up some of the old lath).
When the walls are bare you might be surprised at what you find - rotted vent stack,
rotted wood , bogus electrical stuff in the walls. etc.
Another plus is you could also do a real insulation job- their is a good chance the wall cavities are empty.
Thanks, gang for the info. The wall has been stripped to the cinder block and brick, a new stud wall put up (this is on the exterior wall only) The wall height is 101" +/-. The sink vent - cast iron pipe- has been replaced, the drain pipe has been replaced, the wall insulated and new wiring installed. So to-morrow we do the dry wall - - thanks again for you instructions.
Strap or fir the ceiling. Then you can shim it to make things as flat, level and square as possible.Also, do a good job of air sealing all gaps and penetrations (wire holes, vent stack hole) thru the framing. Then install drywall.
