durock/greenboard butt joint taped ?
We will continue 3×6 subway tile out of the floor to ceiling tiled shower as a wainscot ~ 42 inches with the walls painted above. The shower is 39″ wide so the durock will be installed horizontal. We will have a framed glass shower door. Where do I butt up the durock and greenboard to keep a smooth transition onto the painted walls above the wainscot? Is it the centerline of the curb/threshold? Is this butt joint of durcock/greenboard taped?

butt where you hit a stud at or outside the tub/shower. Yes tape and finish the joint to make it disappear - use Durabond setting type mud.

I usually use Hardi where ever the tile goes. Inside the shower and out. I try to have the seam fall about half way between the last row of tile so that the seam is hidden.

Yup, what the other kids have said. I'll have the seam fall behind the last column of tile. I prefer to have the tile sitting more on the cement backer board than the drywall, so I'll cheat the location of the seam as I'm able.
The exactly location depends on the layout of the tile as well as the availability of a framing member behind the seam.
Since you don't have the wallboard up, you can still add a stud as required so the seam falls on a framing member.
If for whatever reason you really can't add a stud, then once or twice I've slipped a strip (say 4-5" wide and as tall as needed) of 3/4" ply behind the seam location and screwed the cement board and the drywall to it.
