The spaces between the eaves and fly rakes are what’s got me stumped. I dunno what to do about that space.
I’ve considered screening the eaves in but the fly rakes probably ought not to be screened.
Plus the space between the flying rafter and the one on the building – – what ought I do with that – – it looks so large and empty.

I have a collar tie installed It spoans the gap between one rafter's birdsmouth and it's opposite.
I think I'know what I'm going to do I just haven't figured out what I'll use.
I'm going to enclose the eaves and soffits. I think the flying rafters forced my hand there.
I need boards just a scosh larger than 12" and I'll prolly have to make them up from smaller stock.
I think what you are asking is how to finish the under side of your roof overhang (soffit). Since you said you have a space wider than 111/4" then 1"x12" won't work. You could use a few pieces of tongue and groove or sheet stock such as 1/2" MDO or AC plywood. With sheets you can simply butt the seams tight and leave them or cover the seams with battens and create a panelled look.
For the eaves you should probably install a purpose-made strip vent. The remaining width can be covered with 3/8" exterior plywood or whatever other material you'd like.
