Windows normally have standardized jamb depths based on 'typical' wall construction. Should you, for instance, furr or cross-strap a wall, use a double layer of drywall or a thickness of drywall inconsistent with the manufacturer's standard you would normally need to use extension jambs to bring the window jambs flush to the finished wall surface for the application of casing.
You can attach them with nails and glue - or better yet pocket screws if you have a Kreg jig.
