I’ve been mudding some drywall using the ultra lightweight mud, uncut, straight from the bucket. I’ve had good results everywhere except the corners. I’m not using a corner trowel, but rather finishing one side of the corner at a time. The issue I’m having, when using the 8 inch knife is that the drywall smooths out very well everywhere except the corner. In the corner, it tends to get gritty and even recessed so to speak, such that when it dries, it appears that there is an even grade from the outside edge to the corner, then a gap right along the corner that needs to be filled in. I’m using a straight knife and I’ve wondered if I should file a tiny bit off the ends to keep it from dragging the inside edge. But then I’m sure it’s something I’m doing wrong. I do put more pressure on the outside of the knife so as to taper it from outside to inside, but I still have trouble with it. I’ve tried cutting the mud with water and still have the same problems.

I'm not a professional finisher but have taught myself enough to do a good job on my own work. I'm slow, but careful. After fussing with internal corners I finally resolved to do one side at a time, like you have been doing. (I gave my corner trowel away... I hated using it. ) Also, like you, I can't get a good "seam" right in the corner. So, now, I don't try. I trowel as best and as close as I can, let it all dry, then caulk the corner before painting. No one ever has noticed that the corner isn't a true 90º, but has a gentle fillet. And I don't notice either. No harm, no foul.
Use topping after the first coat.
