After jacking up an old house to make it more level, the floor is still a bit uneven (Plywood over joists, as near as we can tell; currently hit has linoleum and carpet over that.) Ceiling heights are already below standard, so we want to avoid building up the floor further. We don’t mind having a new floor that continues to be a bit uneven, as long as the flooring does not have edges to make us trip!
So the question is, given that we want wood or wood-look, what flooring type would be best for this situation? Does wood laminate flex enough for some low/high spots?

I'd remove as much of the built up floor as possible, then lay 3/4" t&g wood flooring over plywood,also t & g if possible.Thinner than that such as 3/8" or laminate, and the floor could bounce in that area or worse sqeak so level it as best you can.
I have found that OLD floors have a tendencey to stay slightly out of plumb unless you do lots of joist replacement and also the subfloor has been in that position for a long time, so they usually stay that way.
Unless you want to make a carreer out of this, I have removed, or fixed the high spots and used large amounts of floor leveling compound. This works well if the floor is sound and only not level. I have mixed up large amounts and raked the floors with a large staright edge. You won't make the floor perfect but you can flatten enough to install laminate flooring, which is a little more forgiving. The pad under the laminate will also smooth it out more.
Use a level (laser best) and mark the low spots ahead of time. Some spots will needs numerous coats. Follow the directions on the compond.
