new construction, pier and beam, 3/4″ advantech subfloor
Most of the house will have 3/4″ hardwood floor. Bathrooms and laundry room will have vinyl flooring.
What should go under the vinyl flooring to bring it up close to the same height as the hardwood flooring?

Find the cheapest approved for vinyl underlay that's 5/8'' (not a fan of particle board) .

With the requirement for an additional layer of 5/8ths plywood to level off the floors you might revisit tile in place of vinyl flooring.
If you are really tight for money simply put a transition piece on the hardwood flooring
Finances are not the issue. The wife and I really dislike tile. It is not an option.

1/2" underlayment grade ply, topped by 1/8" luan rated for under sheet vinyl. That will get you pretty close. Make sure you use 10,000 staples per sheet to make the demoltion guy happy when they replace the vinyl with tile.
Seriously, thinking forwrd to the day the vinyl is replaced with ceramic, do not glue the additional layers of plywood. Use screws.
