The best damn folding sawhorse I ever run across is one manufactured by EBCO, located in St. Louis. This horse is made from stamped (galv) steel. They are extremely light-weight. You can install a sacrificial cutting board to the top of the horse by simply screwing on a 2X4 with a couple of drywall screws from underneath.
These babies are strong too. They claim they will hold 100 pounds per horse, and I believe it. Once had nearly 40 sheets of 1/2 inch drywall on top, plus, it held my 240 lbs when I stood on top of this whole pile and used it as a makeshift scaffold plank.
Cost for a pair of these horses runs around $25 total. I have seen these things on sale before for the unthinkable price of $12 a pair. I own several pair.
Since I've stated a lot of "Pros" concerning this particular product, I need to also mention it's only flaw (con)....that being that the legs do fold up nicely inside the top part of the saw horse, but they will just as easily start to unfold when carrying them, so you do have to be a bit careful as to how you hold them when transporting.

I too have a pair of these folding saw horses and I think that they are great. I took it one step further and mounted an duplex box on the side with 25 feet of cord. This makes working at the saw horses very convenent.
