The building would be 20 by 30. I can get a backhoe in with no problem. The issues I have are how can I form up a foundation and get a concrete truck close enough to reach the furthest wall of the foundation (30)
Would I be better served with piers insted of a stem wall? What are the problems with piers?

For a non-professional answer to your question: have you considered using a concrete pump truck? Or a different type of foundation, such as CMU or precast? Or a wheelbarrow and labor to get the concrete where you want it?
How about building a pole building--putting something like telephone poles into holes that go below the frost depth?
