Hey all,
I’m fixing to put up a partition wall in an existing garage. The garage has “finished” walls and ceiling (drywall, taped and painted), though I’m not sure if the ceiling has been strapped. My question is should I remove the drywall on the ceiling and walls where the new wall will be located (to expose the original framing) or simply frame the new wall tight to the drywall. Pros/cons??

I'd frame it tight to the drywall. Much much easier and not too many more benefits by doing it the hard way.
frame to the DW.. go up into the attic and add some blocking if need be...

Forget the primal scream, just ROAR!!!
Don't cut the drywall.

Our Skytrak is for sale. It has 500 hrs on it. We want 50k (you pay the freight) and we'll finance it. Drop me an email; it's a good buy.
Leave everything as is. Mark the location of your wall on the ceiling and floor, and screw steel channels there. You can now screw your studs into the channels at top and bottom, and it won't matter if the height varies.
ps - don-t forget the sill gasket at the floor. Use Tapcon screws if you haven't got a Hilti gun.
