Sorry, I'm replying and don't fit your description of those you are seeking replies from.
Anyway, I would imagine any metal-roofing system would present noise during rain. Of course, if this is going on top of 14" thick SIP roofing panels that might not be a concern.
If noise is of paramount concern why consider what the manufacture considers to be a premium roofing system and just get the real article?
If I had to reroof my house, I would go with a metal roof without question. They are environmentally more friendly, are much less likely to blow off in a major storm, they look better and finally, they will last a lot longer. Not sure about the brand you mentioned though. Good luck.
The materials are only as good as the installer. Case in point, my metal roof over my bay window was installed by a moron not even meeting what little anti-moron codes might have been in place. Certainly not weather resistent.
