What might be a suitable coating (if any at all) on a new garage slab? I am building a new garage. If it is useful to coat it with anything it seems to me that the time to do so would be when the slab is brand new.

Most barrier coats, like epoxy, want the concrete to have some age on it - a few months is best, IIRC.

I'd place a moisture barrier under the pour. That will help to cure the concrete and will also help to bond the epoxy coating later.

Glad to hear it. With a vapor barrier protecting the slab from changes in moisture content, you should be able to use a water based coating without concern for losing the bond. That's a big advantage in my book.
Rolling a coat of standard epoxy on a surface of that size will release a lot of vapors which should never enter the lungs of any person or animal. Better that they aren't released into the atmosphere either.
