She wants maple now, I was just going to glue a veneer over it
but was curious how the glues will hold to the slick shiny melamine
and the best glue to use in this situation
any ideas

I've used solvent base contact cement successfully, after roughing up the surface. A little depends on your veneer backing, if any.

If you need to bond melamine to melamine, Roo glue is supposed to do a good job. Not sure about veneering with it, but you can check them out here: http://www.rooglue.com/
