I need to find a way to hang custom ceiling panels with no visible fasteners. I know there must be a “floating” system out there that doesn’t require a visible grid or fastener. Any suggestions?
One last thing: the panels are fairly heavy. Approx. 100lbs.

Product looks like the hanging system in miniature that is used to hang cabinets on the wall. Sort of a flat fixed hook and slot. Slot part attaches to the substrate, hook part to the back of the panel. Press the panels against the substrate, slide, click, done. Unless you're framing those panels, then back to the drawing board.
Thanks to all for your input. We're gonna go with a modified pocket door track. We can come at this in sections and screw the last run of panels from above before the tile goes down in the bath above. It turns out that the architect wants to hang a track lighting system between the panel reveals so we need that 2" of float between the panels and gyp. He just forgot to put it on the drawings (!).
I'm with Sphere - Velcro
They make a heavy duty version where the fibers look like little plastic mushrooms. Impact or hard pushing is necessary to get it to "lock". You should be able to run some experiments with test pieces to determine amount of fastener necessary.
When it comes time to pull a piece down, a highly customized butter knife works well to break the seal bit by bit.

But I would hate to hang 100 pound ceiling panels with these or with Velcro. Geez, I hate to think if one fell on a child...
Can you go with screw-in panels with the recessed screw holes covered with a button or mushroom plug?

Hinge them (or use tongue and slot hanger) and then use hidden magnetic latches to hold them in place on the latch end.
