Hello I wonder if anyone can help me? We have a gas fireplace with very outdated textured tiles. We never use it, but I want to update the look of it. I was thinking a peel and stick type of planking or something else? Any suggestions on how to get it to adhere to the tile. It’s a smooth texture. Prob from the 90’s! Any help greatly appreciated.

That tile is probably stuck on with mastic but I'd pull it off before doing anything else. I wouldn't use Peel and Stick anything. Put some new modern tile or stone on it.

They sell products to prime over tile. Would work best if you sand or etch the surface first.
You can try some peel and stick. If the lengths of whatever you use are vertical, you should be able to put some kind of trim at the top to help keep it in place.
But pulling it out might end up less messy at the end of the day.
Keep in mind that even though you may not be using the gas fireplace now, you want to understand clearance requirements from combustible materials.
I think you will have trouble with peel & stick directly over the tiles. Check the wall with a long straight edge, ( a good yardstick will do). The new finish will only stick where it can touch the tiles.
To apply a finish over the existing tile, the first step is to clean the wall with TSP or equiavalent.
Epoxy paint can be applied directly over the tiles if the existing tile pattern is OK and only a color change is needed.
For smooth paint or peel & stick:
-apply a bonding primer intended for use over tile.
-trowel on a plaster or setting type joint compound (Durabond) to get a flat surface.
-prime that surface with regular paint primer,
-paint or apply peel & stick.
For new tile: appliy directly over the bonding prime.
