A high-end cooler costs a lot of money, therefore I’m just searching for advice or justifications. Is the investment actually worthwhile? For years, we’ve gotten away with Coleman’s and Igloos. I keep a cooler aboard the boat we keep in the water now that it is there. Does Ice actually last that long there?

No idea what this has to do with building but I wouldn't spend my money on one. Ice is pretty cheap and it would take many years and a lot of ice to pay for an expensive cooler.
I go camping with a bunch of guys. We often spend 3 or more days off the pavement. One large cooler for food, a smaller one for drink ice, and a high end one for our ice supply. With block ice and a little dry ice we will have plenty of ice after 3 days. The system works well. We used to run out. One minus the high end cooler is heavy.
