Just wondering-on most butt hinges, one leaf is flat all the way up to the knuckles and the other has an offset in the leaf up near the knuckles. Does the leaf with the offset go on the door or on the jamb, or does it matter? Be safe out there.

Most are symmetrical (from that regard), in my experience. But sometimes you have an extra-deep jamb, or trim that lies flush with the jamb edge, and if you use a symmetrical hinge you'll have to gouge out the jamb/trim to allow the hinge to lay flat. In such cases the offset hinge can be beneficial.
The offset your refering to is called swaging, which allows the hinge leaves to lie closer together when the door is shut.
Most hinges I have seen have both leaves swaged, so it doesn't matter which side you put the hinge leaf on.
