You have several options to insulate, and can consider these with the structural improvements you will need.

Adding to what Mike is saying -
That roof is completely relying on the ceiling joist to hold the walls together. If you plan on simply removing those you'll run into issues with the walls spreading, and the roof sagging.
One option you might consider is to remove one of the planks on either side of the ridge, cut the rafters back on either side, and insert a structural ridge beam to carry the load of the roof, hiding the columns within the walls. This has other factors too - the roof would need to be temporarily supported, and the footer near the posts would have to be adequately sized. You'll also loose a foot or more of head room, depending on the span. It's hard to tell from the picture, what's the height from the current cieling joist to the ridge?
