I am finishing up an unattatched garage and want to drywall the ceiling. The temps are falling here in NY, sometimes getting below freezing at night. Does regular joint compound need 24hrs of above freezing temps? The garage doors arent in yet and there is no heat. Do the setting compounds that you have to mix set fast enough that the temps wont matter? Should I just hang the rock and wait till spring to tape?

You should close the doors with plastic and put an electric heater in there or at least wait until the doors are installed.
Let's say you spread mud at 40° and are lucky enough to have it stay there and not freeze. I won't dry in 24 hours like in summer. It might be gummy still in a week. So it is more than just not freezing.
Now suppose you use setting type compound. It will set before it freezes but if the sheets are below 45° it won't get a good bond. It'll shrink back (flash) away from the cold sheets just like your dillywhopper would if you jumped into an ice cold bedsheet.
I wouldn't spread mud at less than 55°

We do a lot of temporay installations for drywallers, they want 3 things.... heat,light and more heat. Even in the summer they want more heat.... better get the heat on!
This is my way ;
Close the garage up with vesqueen. Put a torpedo heater on thermostat at 65 degrees at 6 in the morning , and go eat breakfast , smoke , and drink a pot of coffee. Come back with 90 minute mud and do the job in one day . Get paid and be ready to roll to the next one in the morning.

Go for the menthol ultra light 100's. Once you get use to them you're that much better off and you can almost tell that you're smoking a cigarette instead of toking air thru a straw.
