How does your mason “bend” the flue liner in a masonry chimney? My design has a 16×16 modular size clay flue liner coming out of the smoke chamber, but needing to bend over so as to go up an assymetrical chimney. Do they just make a bevel cut on the end of a flue tile, and tilt it over atop the level face of the tile below? I need to do about an 8 degree bendover for a couple 24″ fluetile sections before straightening up again.

There's a constant source of clean water for you to use, and all you have to do is collect it.

Yep. You got it. Cut the bevel, and mortar the flues together with stuff called "Heat Stop". It is non water soluble when dried. You can get it at Lindemann Chimney Supply , Albany NY
Make sure that the flues are well supported both at the start of the tip and where the flues straighten out.
Regular mortar is water soluble and should water come down the flue it will seek it's way out, usually thru a flue mortar joint.
